Operation Management
Case study 1 Lettuce and Celery Slack N, (2008) Operations in Practice [DVD]. Pearson Education ISBN 987-0- 273-72514-5
BACKGROUND
Operations Management (OM) is an important aspect of business. Both service and manufacturing organisations use OM to ensure they are competitive and assist in
providing and maintaining good levels of customer service. Developing a system of an organisations operation can be advantageous both for both the customer and
organisation. Subsequently, once a system has been developed and understood it should be possible to determine why the system works well, or not well, and to recommend
possible production related improvements that will assist both parties concerned.
Use the following link to review a case study of harvesting Lettuce in the fields of Lincolnshire and answer the question below
1. Apply the input transformation output model to the case study, clearly identifying the transformed and transforming resources,
2. Produce a flow chart of the Operational Delivery Process, from this analyse which stage is the main bottleneck in the system
3. How can this bottleneck in the system impact on the performance objectives? Evaluate what could be done to improve the control and reduce the bottleneck.
4. Where in this operational process might there be too much capacity? Using Operations management theory/techniques explain how this excess capacity could be
controlled.
5. From your overall evaluation of the Operational Delivery process discuss other ways in which you believe the system could be improved to better align with the
performance objectives.
